Determining the perfect date for Chardonnay harvest involves a little intuition and a little science, which comes in the form of an interesting viticulture contraption - a refractometer - shown below.

The refractometer helps to measure the Baumé - sugar and ripeness - of our fruit, by analysing the density of the Chardonnay juice.

These tests in our Valley Block Chardonnay are showing veraison is perfectly on track, with our Chardonnay harvest expected to kick off in the coming week.
