COLOUR
Bright pale straw with a grass-green tinge.
NOSE
Wonderful aromas of passionfruit, lime, floral nuances and sweet herbal notes leap from the glass with undertones of guava, sauvory yeast, citrus, lemon thyme and oak spice.
PALATE
Opens with fresh upfront acidity providing an amazing backbone for the enticing flavours of passionfruit, savoury herb scones and hints of spiced sourdough. The structure is tight, directing the incredible flavours to the back of the palate for a crisp, clean finish with a hint of elegantly toasted French oak spice.
Winemaker Notes
Sauvignon Blanc provides tropical passionfruit aromatics which are complemented by the Semillon’s lime and floral notes. The wine’s complexity is enhanced through using juice of various clarities which is fermented with specialised yeasts to increase the aromatic lift of each variety. A portion fermented in new French oak also heightens the pure fruit flavours, instilling a delicate influence of fine grain tannins. This year for the first time 1% of the Sauvignon Blanc was fermented entirely on skins, adding savoury elements and texture to the wine.
